The Pasta That Got Me Out of Bed at 9PM

When it comes to food, I’m gonna get it. Every time.

It’s 11 PM and I just finished eating dinner not because I was busy, but because I was way too comfortable in bed after work to move. Around 9 PM, I finally got up and made one of my favorite comfort foods: pastaaaaa.

I’m pescatarian, but every now and then I take a break from seafood and when I do, I usually make something cozy like pasta or soup. Tonight’s pasta? I don’t even know what to call it other than restaurant-style pasta, because that’s exactly what it tasted like.

But I’m not about to leave y’all hanging like that, so here’s the recipe (and you already know we don’t measure over here, so use your best judgment 👀):

What I Used:

  • Cellentani pasta

  • Chicken bouillon (yeah I know it’s artificial, don’t shoot)

  • Spinach, garlic, cherry tomatoes, red onions

  • Grapeseed oil (about a teaspoon)

  • Seasonings: oregano, Slap Ya Mama, black pepper, garlic salt

  • Non-dairy whipping cream (about ¾ cup)

  • Red wine vinegar (maybe ½ cup pour to taste)

  • A little butter

  • Parmesan cheese

How I Made It:

  1. Boil your pasta with a bit of chicken bouillon in the water.

  2. In a pan, sauté your garlic, red onions, spinach, and cherry tomatoes in grapeseed oil until it smells like you’ve got your life together.

  3. Season it up with oregano, Slap Ya Mama, pepper, and garlic salt.

  4. Pour in your non-dairy whipping cream, add the red wine vinegar, a little butter, and season again (because we season in layers, duh).

  5. Toss in your pasta and a splash of pasta water to loosen it up. Let it simmer until it’s creamy but not soupy.

  6. Sprinkle on that parmesan and muah chefs kiss restaurant vibes from the comfort of your own kitchen.

By the time I sat down to eat, I realized this meal was more than dinner it was a reminder. Comfort doesn’t always show up in fancy self-care routines or perfect timing. Sometimes, it’s a random Wednesday night at 11 PM when you finally feed yourself something you actually want.
